London’s original cheese conveyor belt restaurant, Pick & Cheese, is crossing the Atlantic — with its first-ever U.S. location opening at Shaver Hall. Founded by cheese connoisseur Mathew Carver who is renowned for championing small cheesemakers, the restaurant will be working exclusively with independent local producers and it’s about to change the way New Yorkers see American cheese.

It’s playful.
It’s serious about sourcing.
It’s never too serious about itself.

About Pick & cheese

A restaurant dedicated entirely to great cheese.

That means a rotating conveyor belt of small-producer cheeses, each thoughtfully paired with something that makes it sing. It means grilled cheese sandwiches worth crossing town for. It means punchy blues, perfectly ripe bloomy rinds, and aged wheels worth shouting about.

CHURCHTOWN DAIRY

Hudson, New York

Set across 250 acres in Claverack, Churchtown Dairy produces biodynamic cheeses from Brown Swiss, Jersey, and Guernsey cows. Every wheel reflects the Hudson Valley landscape and a deep commitment to sustainable farming.

GOAT RODEO FARM & DAIRY

Allegheny County, Pennsylvania

A 130-acre family-owned farm near Pittsburgh with over 100 Alpine and Nubian dairy goats. Bright, joyful goat’s milk cheeses with serious character.

SHEPHERD’S WAY FARMS

Nerstrand, Minnesota

Award-winning sheep’s milk cheeses made entirely on-farm from pasture-based ewes. With a flock of around 200, production is limited — and special.

LIVELY RUN DAIRY

Finger Lakes, New York

Family-owned since 1982, producing award-winning goat and cow’s milk cheeses in the Finger Lakes region.

BLUE LEDGE FARM

Salisbury, Vermont

Established in 2000, Blue Ledge Farm is a first-generation, family-run dairy dedicated to producing exceptional cows and goats cheese with respect for animals, land, and community. Guests can even visit and stay at the farm.

JASPER HILL FARM

Greensboro, Vermont

Champions of Vermont’s Northeast Kingdom, Jasper Hill focuses on value-added agriculture that supports local dairy farms. Their cheeses are benchmarks of American craft.
